Did you guys see this in the Times last week? A short history of cashew chicken from its inception to its proliferation into the mainstream. As a Chinese person, I’ve never actually had cashew chicken, but it’s interesting to read about an immigrant’s innovation and struggle (someone threw dynamite into the guy’s restaurant in act of racism in the 60’s!) and also, to remember how food can be the unlikely bridge between cultures. I might actually try it one day. General Tso will be rolling around in his apocryphal grave.
